This is because if you put the whole corn directly on the grill then it will burn the husk while perfectly cooking the corn inside. There is no need to prep or marinate the corn before just pop your corn on the grill and cook for approx. 15 minutes turning sporadically.Corn SaladIf grilled corn is not the preferred way to eat it then you can always make a corn salad for the table. For this salad you will need:2 cans of salt-free sweetcorn, drained1 red onion, finely chopped2 large tomatoes, deseeded and finely diced1/2 small pack coriander, roughly choppedjuice 2 limes4 tbsp extra virgin olive oil2 tsp clear honeyMethod:For the salad, combine the sweetcorn, red onion, tomatoes and coriander and make the dressing from the lime, olive oil and honey. You can serve the dressing on the side or on the salad already.ColeslawColeslaw is another one of the barbecue side dishes that simply consists of three ingredients: white cabbage, carrot and mayonnaise. It is a truly simple side dish and usually goes down a treat. All you need to do is shred or grate the white cabbage and carrot to get it into long strips. Once you have that you marinate it in the mayonnaise and season as desired. You can always jazz up your coleslaw too with option add ons such as; apples, cheese, vinegar, mustard, red cabbage or anything else you might like to see in your coleslaw.Israeli SaladThis is a super easy salad to make and is absolutely delicious. All you need for this is:1 cucumber, diced into squares2 big tomatoes (or 10 cherry tomatoes), diced into squares1/2 white/red onion (or 1 shallot)3 tbsp extra virgin olive oil3 tbsp fresh lemon juicea few sprigs of parsleysalt to tasteMethod:Once you have all your ingredients readily chopped you just combine them in a bowl and voila!TaboulehTabouleh is very much like Israeli salad in that is contains very much of the same ingredients. All you need to do is cook some couscous and add the diced cucumber, tomatoes and parsley to couscous instead of dressing it and you will be left with tabouleh instead of Israeli salad. Simples!Pasta and Bacon SaladThis BLT salad is the perfect BBQ side dish for the meat lover! All you need is:10 slices bacon, cooked and diced (grease reserved)12oz pasta, cooked and cooled1/2 mayonnaise3/4 ranch dressing1 1/2 cup diced tomatoes1/2 avocado, diced1 cup cheddar cheese, grated1/3 cup red onion, diced1 cup romaine lettucefresh parsley for garnish (optional) Method:Whisk together mayonnaise, ranch dressing and 1 tablespoon bacon grease (optional).In a large bowl assemble the pasta, tomatoes, avocado, cheese, red onion, lettuce and bacon.Pour the dressing over and toss or serve the dressing on the side.Garnish with parsley, if desired, and serve!
